Meatloaf with Mustard

Yes there is such a thing as "Honey Mustard Meatloaf" who could have guessed. The thought crossed my mind and then like anyone I sat down to Google and what pops up but a recipe from about.com southern food.

We tried it last night and can I say Yummy!!

1 1/2 lb lean ground beef or a combo of beef and turkey (we used beef only)
1/3 cup dry bread crumbs dried or seasoned (we used Italian Blend)
2 eggs
1/2 cup chopped onion
1 teaspoon chopped dried leaf basil
1/2 teaspoon seasoned or plain salt (we used seasoned)
1/4 teaspoon pepper
3 Tablespoons dijon style mustard (we used brown and spicy)
3 Tablespoons honey (we urge people to find a local farm with honey)
2 Tablespoons chopped onions (we did not use these)

Preheat oven to 350. Combine ground beef, bread crumbs, onions, Basil, salt and pepper. Stir in eggs, mixing gently but thoroughly. Shape into loaf. Place loaf in the baking pan. Combine honey and mustard, brush half of the mixture on loaf ( I put each half in a separate bowl to avoid contamination). Bake at 350 for 30 minutes, brush with remaining honey and mustard mixture. Bake for 30 to 45 minutes longer. Remove from oven and sprinkle chopped green onion. Serves 6 to 8.
