Just wonder I long I keep recipes before I try them. Well this one came out of Womans Day 4/15/2003!!! It came from the 1.2.3. Dinner Feature.
After making it I felt like a dummy for not trying it sooner. We eat Zatarins Rice weekly. This is an excellent example of how to take a boxed meal and spice it up.
1 box (8oz) red beans and rice mix
2 bell peppers, cut bite-size
4 fully cooked spicy beef sausage (from a 14 oz package) sliced
1 tsp olive oil
Scallions for garnish
1. Bring 3 1/2 cups water to a boil in a large saucepan. Add rice, mix, reduce heat, cover simmer 10 minutes.
2. Meanwhile heat 1 tsp oil i n a large nonstick skillet. Add peppers; saute' over high heat 5 minutes or until lightly charred in a few places. Add sausage; saute' 3 minutes until lightly browned.
3. Place mixture on rice (don't stir), cover and simmer 10 minutes until rice is tender. Stir to mix; sprinkle with scallions.
I did this exactly by the recipe and I found that I should have simmered the rice about 15 minutes before adding the peppers and sausage. It was a bit watery we had used a slotted spoon to get it out of the pot. Otherwise this will be the standard way we cook Zatarins Rice from now on.
