Corn Casserole

This is the perfect recipe for pot lucks. I have taken it to functions where the most the pickiest of people were attending and they loved it.

Again I don't know the original origin, but I got it from an old roommate.

1 package of saffron rice mix
1 stick of butter
1 can cream of celery
1 cup shredded cheddar cheese
1 can Mexican corn (drained)

Cook rice according to package. When ready add remaining butter to rice stir until melted. Mix in rest of the ingredients then poor into dish. Bake at 350 degrees for 35 minutes.

You can also make this ahead of time refrigerate.
