Well the better half rebelled at eating brisket another night. Grocery store day is tomorrow so I needed to go to the pantry to see what ingredients I had to make it through the meal.
Guilt Free Chicken and Dumplings came from a friend of mine about 4 years ago who was doing Weight Watchers. I don't know if this is a Weight Watchers recipe or if she came up with it on her own.
2 1/2 cups chicken broth
6 oz. cooked chicken white meat ( I actually like more meat and used 2 cans)
3 Tablespoons Flour
4 6 inch 98% Fat Free Flour Tortillas
1/2 cup 1 % or skim milk
Bring the broth to a rolling boil. Rub flour on both sides of the tortillas and Cut into 1 1/2 inch pieces. Drop them into boiling broth. Reduce heat & Simmer in a covered pot for 20 minutes, stirring frequently. Stir in chicken and milk, and leave over heat until heated through. Let stand off heat covered for 10 minutes.
This is a light meal. So when my huband informed me he had not eaten lunch I through from frozen peas in the microwave because I felt bad about not making something a bit heavier. He hasn't hit the snack jar yet so I guess all is well.
