This particular one came from the Weight Watcher Network and is said to have 4 points per drumstick.
The secret to the success of this recipe is to make sure that both the chicken and the yogurt are very cold. Start by soaking your chicken in ice water. This will also help the breading to adhere, and produce a crisp coating much like that of fried chicken.
Light vegetable oil cooking spray
10 chicken drumsticks, skin removed
3 1/2 cups ice water
1 cup plain nonfat yogurt
1 cup dried Italian bread crumbs
1 cup all purpose flour
1 tablespoon Old Bay seasoning ( I wanted to clean out my spice cabinet so I used McCormick Grill Mates Montreal Chicken Seasoning so you can easily substitute)
Coat a baking sheet with 3 sprays of the vegetable oil
Put the chicken in a large bowl with the ice water. Put the yogurt into a medium bowl. Set both bowls aside.
Toss all the breading ingredients into a large Ziploc bag. Seal and shake well to mix.
Remove 2 pieces of the chicken from ice water, and roll each piece in yogurt. Put the chicken into the plastic bag, reseal, and shake to coat thoroughly. Transfer the breaded chicken to the prepared baking sheet. Spray the chicken lightly with the cooking spray.
Place the baking sheet on the bottom shelf of the oven at 350 and back for 1 hour, turning the pieces every 20 minutes to allow for even browning. Serve hot or at room temperature.
* Make sure that your chicken is a minimum of 180 degrees.

I used the nonfat yogurt method on chicken breasts last night and it worked, too.
I put one of our favorite BBQ seasonings "Smoking Guns" in with the bread crumbs.
A Plus... I wonder if it would work on pork chops? Being a southern girl who loves fried pork chops maybe I should try Unfried Chops.
