You know how I like to get recipes out of the Sunday Paper. Well this one came from there about 4 years ago. I made it once with the ham option and my husband liked it, but for some reason I never pulled this out of the cookbook again. It was from a Pillsbury Bake-Off
Until yesterday when I looked in the fridge and decided I needed to use some of the bits and pieces of food left in the fridge ( 1/2 package of bacon, 1/2 red pepper, a wedge of red onion, 1/2 carton of eggs, etc.)
1 (16.3 oz) can Pillsbury grands refrigerated buttermilk biscuits
7 eggs, beaten
3/4 cup (about 4 oz) chopped cooked ham or 4 oz bacon, crisply cooked, crumbled
2 tablespoons chopped fresh parsley
3 tablespoons milk
1 tablespoon butter or margarine
3 oz. (3/4 cup) shredded cheese (American or Cheddar)
As I stated above I added other things in my frig and kind of made a scrambled omelet.
Heat oven to 375 Bake biscuits as directed on can.
Meanwhile in medium bowl, combine eggs, ham, parsley and milk. In medium skillet, melt butter over medium heat. Add egg mixxture; cook 6 to 10 minutes, stirring and turning occasionally, until egg mixture is set. Stir in Cheese.
