Country Egg Noodles with Ham

Well the Pumpkin muffins must have been a success even without the salt because my husband took them to work to share with his co-workers. YEAH!!

Yesterday was a day for recipes. As they say in the South..."for supper"...I prepared “Classic Country Egg Noodles with Ham” . This recipe came from a Mueller’s Coupon Ad in the Sunday paper.

12 oz Mueller’s Wide Egg Noodles ( I used whole wheat noodles in my attempt to be healthier.)
¼ cup butter or margarine ( I used I Can’t Believe it Is Not Butter)
¼ cup onions, julienne cut (I am not sure what that meant, but I cut them lengthwise)
1 cup green peppers, julienne cut
1 cup carrots, julienne cut
1 cup ham, julienne cut ( I actually bought prediced Smithville Ham)
1 cup Parmesan cheese, grated or shredded

COOK noodles according to package directions; drain, saving ½ cup noodle-cooking water.

MELT margarine in large skillet; add onions, peppers, carrots and saute about 5 minutes, until tender-crisp

ADD ham; stir 2-3 minutes, until heated through

STIR IN noodles, noodle water, Parmesan cheese; blend well. Salt and Pepper to Taste.

Prep Time 20 minutes
Cook Time 25 minutes
Serves 8

Serve with fresh crusty bread for a hearty satisfying meal. I did not but bread is one of the things we are trying to take out of our diet when we can.
